Zucchini Pear Bread: A Delicious and Healthy Recipe

Ingredients

Dry Ingredients:

  • Maida or wheat flour: 2 cups
  • Baking powder: 1 tsp
  • Baking soda: 1/2 tsp
  • Salt: 1/2 tsp
  • Cinnamon powder: 1 tsp
  • Nutmeg powder (optional): 1/4 tsp

Wet Ingredients:

  • Zucchini (grated): 1 cup
  • Pear (grated): 1 cup
  • Sugar: 3/4 cup (can use brown sugar also)
  • Egg: 2
  • Vanilla essence: 1 tsp
  • Vegetable oil or butter (melted): 1/2 cup

Optional Ingredients:

  • Chopped nuts (like walnuts): 1/2 cup
  • Chocolate chips: 1/4 cup

Method

  1. Preheat the oven: Preheat the oven to 180°C (350°F). Grease a bread tin with oil or line it with butter paper.
  2. Mix the dry ingredients: In a large bowl, sift the flour, baking powder, baking soda, salt, cinnamon and nutmeg powder. Mix them well.
  3. Prepare the wet ingredients: In another bowl, whisk the egg, sugar, oil and vanilla essence. Add the grated zucchini and pear.
  4. Combine the ingredients: Slowly add the dry ingredients to the wet ingredients. Do not over-beat, just enough to incorporate everything. If you are adding nuts or chocolate chips, add them now.
  5. Bake the bread: Pour the prepared mixture into the bread tin and bake it in the preheated oven for 50-60 minutes. Use a toothpick to check the doneness of the bread; if it comes out clean, the bread is ready.
  6. Cool and serve: Let the bread cool in the tin for 10 minutes, then remove and cool completely. Slice it and serve with hot tea or coffee.

Tips

  • Do not squeeze the zucchini and pears too much; their juice will make the bread soggy.
  • If you want to reduce the amount of sugar, you can use brown sugar or honey.
  • Store this bread in an airtight container for 3-4 days.
