Pumpkin and Peanut Bars: A Decadent and Delicious Recipe

Pumpkin and Peanut Bars are a delicious and nutritious snack that you can have with tea or as a snack. This recipe is easy to make and will be loved by kids and adults alike. Peanuts give it a crunchy texture and pumpkin adds flavour to it along with lotus seeds and spices.

Ingredients:

  • Pumpkin puree – 1 cup (use homemade pumpkin puree and mashed pumpkin)
  • Maida (whole grain flour) – 1 cup
  • Herbal powder – 1 tsp
  • Cinnamon powder – 1/2 tsp
  • Salt – a pinch
  • Ghee or butter (melted) – 1/2 cup
  • Brown sugar – 3/4 cup
  • Egg – 1 (optional, you can replace it with chickpea water or yogurt)
  • Vanilla essence – 1 tsp
  • Pan (finely chopped) – 1/2 cup
  • Dokla or chocolate chips (optional) – 2 tbsp

Prepare the Dough:

  1. Preheat oven to 180°C.
  2. Line an 8×8 inch tray with butter paper and grease it with ghee.

Final Ingredients:

  1. In a large bowl, combine the maida, cinnamon powder, and salt. Whisk well.

Prepare the Wet Ingredients:

  1. Mix pumpkin puree, brown sugar, melted ghee, egg, and vanilla essence in a separate bowl.
  2. Beat the mixture until smooth and creamy.

Mix and Bake:

  1. Gradually add the wet ingredients to the dry ingredients and mix well.
  2. Add chopped peanuts and, if desired, dokla or chocolate chips.
  3. Pour the prepared mixture into the tray and spread evenly.
  4. Bake for 25-30 minutes. Check doneness by inserting a toothpick; if it comes out clean, the bars are ready.

Cool and Serve:

  1. Remove the baking tray from the oven and let the bars cool.
  2. After cooling, cut into square pieces.

Serving Method:

Enjoy these Pumpkin and Peanut Bars with tea or coffee. Sprinkle powdered sugar on top or drizzle with honey for added sweetness.

Tips:

  • To make pumpkin puree, cut pumpkin into small pieces, steam it, and then mash it.
  • You can use molasses or jaggery instead of sugar for a healthier option.
  • Replace peanuts with almonds or pistachios for variation.
